Ingredients
- 4 slc Canadian bacon
- 8 x Large eggs
- 1 1/2 c. Shredded fat-free cheddar cheese
- 2 tsp Parsley, finely minced

Canadian Baked Eggs

Directions
- Prep: 5 minutes, Cook: 15 minutes. Preheat oven to 325 F. Line bottom of 4 lightly buttered shallow ramekins or possibly individual gratin dishes with bacon, cutting to fit, if necessary. Carefully break 2 Large eggs into each dish. Sprinkle cheese over top and bake 12-15 min, till whites are just set and cheese is melted. Sprinkle with parsley and pepper to taste before serving.
