  • 250 gm Campanelle, (8oz)
  • 2 Tbsp. Extra virgin olive oil
  • 1 sm Onion, finely minced
  • 125 gm Creamery soft cheese, (4oz)
  • 4 Tbsp. Lowfat milk Grated rind and juice of 1/2 lemon
  • 2 Tbsp. Freshly minced chives Salt and freshly grnd black pepper
  • 1 x 100 gram pac smoked salmon, cut into strips Lemon wedges to serve

Directions

  1. 1. Cook the pasta following instructions on the pack.
  2. 2. Meanwhile, heat the oil in a pan and cook the onion for 3-4 min, stirring occasionally.
  3. 3. Stir in the Creamery cheese, lowfat milk, lemon rind and juice, half the chives and seasoning to taste.
  4. 4. Add in the cooked, liquid removed pasta and salmon, mix well and heat through. Transfer to a warmed serving dish, sprinkle over the remaining chives and serve immediately with lemon wedges.
  5. NOTES : This elegant pasta dish combines campanelle with luxurious smoked salmon, soft cheese and chives. Easy to make, it is a perfect dinner party dish, suitable for a first or possibly main course.
