California Turkey Chili

Ingredients

  • 1/2 tsp Extra virgin olive oil
  • 1 c. Bell peppers, minced
  • 1 c. Onions, minced
  • 2 x Cloves garlic, chopped
  • 30 ounce Dark red kidney beans, liquid removed and washed
  • 29 ounce Crushed tomatoes
  • 1 c. Water
  • 3 c. Turkey light meat, skinless, cooked and cubed
  • 1 Tbsp. Chili pwdr
  • 1 tsp Coriander
  • 1 tsp Red pepper flakes
  • 1 tsp Salt
  • 1 c. Fat-free Cheddar cheese, grated

Directions

  1. In a skillet heat oil over low heat. Add in bell peppers, onions, and garlic.
  2. Cook till tender. Then, add in beans, tomatoes, water, turkey, chili pwdr, coriander, red pepper flakes, and salt. Simmer 25 min.
  3. Serving Ideas : Serve topped with grated cheese, if you like.
