Calabacitas (Burrrito Filling)

Ingredients

  • 1 sm yellow onion
  • 2T water
  • 2 sm zucchini, quartered lengthwise and sliced
  • 4oz button shrooms, sliced
  • 1/2 t chili powder
  • 1/2 t ground cumin
  • 1/4 cup frozen corn
  • ground pepper

Directions

  1. Put onion and 1T water in lg skillet over med high and cook and stir til water has evaporated.
  2. Stir in remaining 1T of water, zucchini, shrooms, cover, and cook for 10 mins, or until zucchini and shrooms have released juices.
  3. Decrease heat to low.
  4. Stir in chili powder and cumin, cover, cook 5 mins, or til shrooms are soft.
  5. Stir in corn and cook 5 mins to heat through.
  6. Season with pepper.
