Ingredients

  • (Squash and Chicken)
  • 4 x Zucchini - seeded and cut into cubes
  • 4 med ripe tomatoes
  • 1/2 sm onion, sliced
  • 2 x garlic cloves, minced
  • 1 c. frzn corn kernels
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 x - 1 Tbsp. oregano
  • 1 x cut up chicken
  • 1 can diced green chilies (For more heat, don't use chili use 2 whole jalapenos and remove after cooking) Cooked rice

Directions

  1. Bring a pan of water to a boil. Dip tomatoes in and slip off the skin. Dice the tomatoes. Sprinkle the chicken with part of the salt. Place in a large pot with a small amount of oil and cook @ 3/4 of the until done. Remove all juices from the pan. Add in the squash, onion and tomatoes. Stir in the garlic, corn, peppers and seasoning. Cover and simmer about 15 min. Serve over cooked rice.
