Cajun Style Meatloaf

Ingredients

  • 2 x bay leaves
  • 1 tsp salt
  • 1 tsp grnd cayenne pepper
  • 1 tsp grnd black pepper
  • 1/2 tsp grnd white pepper
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd nutmeg
  • 4 Tbsp. butter
  • 3/4 c. minced onion
  • 1/2 c. minced green bell pepper
  • 1/4 c. minced green onions
  • 4 x cloves garlic, chopped
  • 1 Tbsp. warm pepper sauce
  • 1 Tbsp. Worcestershire sauce
  • 1/2 c. evaporated lowfat milk
  • 1/2 c. ketchup
  • 1 1/2 lb grnd beef
  • 1/2 lb andouille sausage, casings removed
  • 2 x Large eggs, beaten
  • 1 c. dry bread crumbs

Cajun Style Meatloaf

Directions

  1. 1 In a small bowl, combine the bay leaves, salt, cayenne pepper, grnd black pepper, grnd white pepper, cumin, and nutmeg; set aside.
  2. 2 Heat the butter or possibly margarine in a saucepan over medium heat. Add in the onion, bell pepper, green onions, garlic, warm pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute/fry till mix starts sticking to the bottom of the pan, about 6 min. Stir in the lowfat milk and ketchup; continue cooking for 2 more min, stirring occasionally.
  3. 3 Remove vegetable mix from heat, and allow to cold to room temperature.
  4. Place the beef and sausage in an ungreased 9 x 13 inch baking dish. Add in the Large eggs, the vegetable mix, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  5. 4 Bake uncovered at 350 degrees F (175 degrees C) for 25 min. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 min. Let stand for 5 min before serving.
