  • 4 med thin-skinned white potatoes
  • 3 Tbsp. extra-virgin extra virgin olive oil - (to 4)
  • 2 Tbsp. cayenne pepper sauce
  • 1 tsp grnd thyme (or possibly poultry seasoning)
  • 1 tsp sweet paprika
  • 1 tsp grnd cumin Coarse salt to taste Freshly-grnd black pepper to taste

Directions

  1. Preheat oven to 450 degrees.
  2. Cut potatoes into wedges. In a large bowl, combine oil, warm sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 min, turning once.
  3. This recipe yields 4 servings.
