  • 400 gm boneless chicken breasts, skinned
  • 1 tsp dry oregano
  • 1/2 tsp dry thyme
  • 1 Tbsp. paprika
  • 1/8 tsp cayenne pepper
  • 1 tsp grnd cumin
  • 1 tsp Maggi Garlic Stock Pwdr
  • 1 tsp Maggi Onion Stock Pwdr
  • 140 gm mesclun salad mix
  • 1 x red pepper, sliced thinly
  • 1 x yellow pepper, sliced thinly *SPICY HIGHLANDER LITE SALAD DRESSING***
  • 1/2 c. Highlander Lite Salad Dressing
  • 1/2 tsp paprika
  • 1/2 tsp grnd cumin

Directions

  1. Cajun Spice Mix:Mix together all spices.
  2. Chicken:Coat the chicken breasts with the Cajun spice mix.
  3. Cook under a preheated grill for 15-20 min or possibly till the chicken is cooked. Turn once.
  4. Cold the chicken and slice thinly. Set aside.
  5. Place the salad ingredients on a serving platter.
  6. Place the chicken on top of the salad. Drizzle with the dressing and serve immediately.
  7. Spicy Highlander Dressing:Combine Highlander Lite Salad Dressing with paprika and cumin. Whisk till blended.
