Cabbage Please!

Ingredients

  • ¼ cup water
  • 3 packages of sugar sweetener
  • 1 tablespoon bacon bits
  • 1 teaspoon salt
  • pepper to taste
  • 1 large onion, sliced
  • 1 large head of cabbage, chopped finely

Cabbage Please!

Time: 20 minutes prep, 20 minutes cook
Servings: 6 servings
 

Directions

  1. Put all ingredients in the pressure cooker. (I always put the water and seasonings in first).
  2. Put the lid on the pressure cooker and set on high heat.
  3. When the “jiggler” begins to jiggle, cut off the heat and cook for 2 minutes.
  4. Remove from heat and allow pot to cool off before removing lid.
  5. Serve as you would with any side dish vegetable OR use for healthy snacking.

Here’s a tasty recipe for cabbage – a new favorite vegetable of mine. Not only is cabbage low calorie but it’s very easy to prepare. If you don’t have a pressure cooker, then just cook in a pot on top of the stove until desired tenderness. I love using my pressure cooker because I really believe it allows the small amount of bacon bits to really flavor the cabbage. And since we’re striving to eat healthier whenever possible, less is better when it comes to one of my cooking favorites (bacon bits).

    I love cabbage too. My mom used to fry cabbage, in butter with salt and pepper, until it was nice and brown and crisp. I loved it when it stayed on the heat a little too long and nearly (but not quite) burned. The saltiness really came out then. Every now and then I still have a hankering for some fried cabbage, but have to haul back on that urge, due to the high calorie/ just-plain-bad-idea-cholesterol issue. lol.
