Buttermilk Waffles With Raspberry Sauce

Ingredients

  • 2 c. Flour
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 Tbsp. Sugar
  • 1 1/4 c. Buttermilk
  • 3 x Large eggs
  • 6 Tbsp. Butter, melted
  • 2 pkt (10 ounce) frzn raspberries
  • 1/2 c. SUPERFINE sugar Grated rind of 1 orange

Directions

  1. Stir dry ingredients into a large bowl.Beat buttermilk and Large eggs at low speed using whisk attachment of Handy Mixer cordless beater in a medium bowl.Slowly add in melted butter.Make a well in center of flour mix.Add in buttermilk mix to well using a beater attachment,slowly blending at low speed till all liquid ingredients are incorporated. Then beat at high speed till smooth,reserve liquid.Puree raspberries in food processor or possibly blender till smooth.Blend in sugar and orange rind and sufficient of reserved liquid till sauce is desired thickness. Pour 1 c. of waffle batter into a preheated,well greased waffle iron and cook till golden brown.Serve with Raspberry Sauce.Garnish with walnuts and fresh raspberries,if you like.Serves 4.
