Buttermilk Cottage Cheese Muffins

Ingredients

  • 1 1/2 c. flour unsifted
  • 1/2 c. buckwheat or possibly whole wheat flour unsifted
  • 1 c. cornmeal
  • 4 1/2 tsp baking pwdr
  • 3 Tbsp. sugar
  • 2 x egg
  • 1 c. small curd cottage cheese
  • 1 c. buttermilk
  • 1/3 c. salad oil

Directions

  1. Combine flours, cornmeal, baking pwdr, salt & sugar; mix well. In small bowl, beat Large eggs lightly; fold in cottage cheese, buttermilk & oil. Make a well in center of dry ingredients and add in liquid ingredienst all at once. Stir with fork just sufficient to blend. Spoon into well-greased 2 to 3 inch muffin c.. Bake at 400 about 20 minutes., or possibly until nicely browned. Can be frzn.
