Ingredients
- 1 1/2 c. flour unsifted
- 1/2 c. buckwheat or possibly whole wheat flour unsifted
- 1 c. cornmeal
- 4 1/2 tsp baking pwdr
- 3 Tbsp. sugar
- 2 x egg
- 1 c. small curd cottage cheese
- 1 c. buttermilk
- 1/3 c. salad oil

Buttermilk Cottage Cheese Muffins
Servings: 12
Directions
- Combine flours, cornmeal, baking pwdr, salt & sugar; mix well. In small bowl, beat Large eggs lightly; fold in cottage cheese, buttermilk & oil. Make a well in center of dry ingredients and add in liquid ingredienst all at once. Stir with fork just sufficient to blend. Spoon into well-greased 2 to 3 inch muffin c.. Bake at 400 about 20 minutes., or possibly until nicely browned. Can be frzn.
