Buttermilk Chicken Chopped Salad Recipe

Ingredients

  • 8 ounces boneless skinless chicken breasts
  • ¼ cup buttermilk
  • ½ cup panko
  • 1 teaspoon salt
  • 1 tablespoons canola oil
  • 2 cups mixed salad greens, chopped
  • 2 cups shredded cabbage
  • 2 green onions, chopped
  • snap peas cut on the diagonal
  • 3 ounces Sliced almonds
  • FOR THE DRESSING
  • 2 garlic cloves
  • 1 knob of fresh ginger, peeled (about the size of a garlic clove)
  • 3 ounces soy sauce
  • 1 ounce red wine vinegar
  • 1 tablespoon sugar
  • 3 drops sesame oil
  • 1 ounce water
  • Serve with dressing on the side or pour two tablespoons of dressing for each serving
  • 8 PP with 2 Tablespoons salad dressing
