Buttermilk Batter Fried Onion Rings

I love thin onion rings on a burger, but just eating them with ketchup is fine, too.

Ingredients

  • 2 large yellow onions
  • bowl of ice water
  • 1 cup buttermilk
  • 1 beaten egg
  • 1 cup AP flour
  • 1/2 tsp. baking soda
  • 1/2 tsp salt
  • canola or veggie oil for frying

Directions

  1. Slice onions in desired size, place in cold water in the fridge for several hours.
  2. Dry on paper towels and heat deep fryer to 375 F.
  3. Batter:
  4. Sift the dry ingredients together.
  5. Mix the egg with the buttermilk, add the dry ingredients and barely blend.
  6. Working in batches, fry the onion rings until golden brown, about 2 1/2 - 3 minutes.
  7. Sprinkle on a bit more salt and serve.
