Bucatini with bacon and peas

Ingredients

  • 400 g bucatini
  • Salt
  • 50 g bacon (or prosciutto or pancetta), thinly sliced
  • 1 tbs olive oil
  • 1 onion, finely chopped
  • 300 g frozen peas
  • 250 g ricotta cheese
  • 1/2 cup Grana Padano or Parmesan cheese, grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Bucatini with bacon and peas

Time: 5 minutes prep, 20 minutes cook
Servings: 3-4 servings
 

Directions

  1. In large pasta pot cook pasta in boiling salted water according to the manufacturer' instructions.
  2. Meanwhile, in large skillet cook bacon/pancetta/prosciutto over medium heat until browned. Transfer to paper towel.
  3. In the same skillet heat olive oil and cook onion until tender, 5-8 minutes.
  4. During last 3 minutes of pasta cooking time, add frozen peas. When pasta is cooked, remove 1 cup pasta cooking water and reserve.
  5. Drain pasta and peas, return to the same pot,
  6. Add ricotta, Parmesan, salt, pepper and reserved pasta cooking water to pasta and cheese. Toss and combine.
  7. Crumble in bacon/prosciutto/pancetta and toss again.
