Bubble And Squeak Fritters Recipe

Ingredients
- 1/2 c. SR flour
- 2 x Large eggs, lightly beaten
- 4 Tbsp. Parmesan cheese
- 2 c. cooked vegetables, finely minced
- 2 x spring onions, finely minced black pepper
Directions
- Mix all ingredients in a bowl. Heat a little oil in a non-stick frying pan. Place large tbs of mix into the pan & cook till golden on both sides. Serve warm or possibly cool.
