Brunch Baked Cinnamon Kohlrabi

Ingredients

  • 6 med Kohlrabi bulbs, peeled
  • 1 lrg Sweet onion, minced
  • 1 tsp Cinnamon
  • 1 Tbsp. Sunflower oil
  • 1/2 c. Breadcrumbs
  • 1 Tbsp. Arrowroot pwdr
  • 2 Tbsp. Cool water Salt & pepper Parsley sprigs, to garnish

Directions

  1. Bring water to a boil in a large saucepan. Immerse kohlrabies & boil till they are tender-crisp when pierced with a fork, about 20 min. Drain & cold.
  2. Trim 1/4" from the root end of the kohlrabies. Scoop out pulp from the opposite end leaving 1/4" thick shells. Dice the pulp & set aside. Place shells in a lightly oiled baking dish.
  3. Preheat oven to 350F. In a separate bowl, toss diced pulp, onion, cinnamon, oil & breadcrumbs. Press mix into shells.
  4. Bake uncovered till the onions are limp & caramelized, about 20 min.
  5. Transfer to a warmed serving platter & keep hot. Reserve the liquid.
  6. In a separate bowl, mix the arrowroot with the water, stirring till completely dissolved. Set aside. Pour reserved liquid into a small saucepan & bring to a boil. Remove from the heat & slowly add in the arrowroot, stirring constantly. Add in more water as may be necessary so which you have a sauce like consistency. Season.
  7. Spoon sauce around the the stuffed kohlrabies, garnish with parsley & serve immediately.
