Brown Sugar Peach Ice Cream

Ingredients

  • 4 lrg Peaches*, pureed or possibly chopped
  • 1 1/4 c. Light brown sugar, divided, firmly packed
  • 1 Tbsp. Lemon juice
  • 1 1/2 c. Lowfat milk
  • 3 x Large eggs, beaten
  • 1 1/2 c. Whipping cream
  • 1 tsp Vanilla extract

Brown Sugar Peach Ice Cream

Directions

  1. Into pureed or possibly chopped peaches, stir 1/2 c. sugar and lemon juice; set aside. Combine lowfat milk, Large eggs, and remaining sugar in medium saucepan. Cook over low heat, stirring constantly, till mix thickens and coats spoon
  2. (160F), about 15 min. Stir in cream and vanilla extract. Chill. Stir peach mix into cream mix; freeze in ice cream maker according to manufacturer's directions.
  3. Makes about 2 qts.
  4. NOTES :*About one lb.; one 16-ounce. package frzn unsweetened peaches, thawed, may be substituted for fresh peaches.
