Ingredients

  • 8 ounces cooked brown rice (I used Trader Joe’s Frozen Organic Brown Rice)
  • 1 head green leaf lettuce, chopped
  • ¼ cup cilantro, chopped
  • 1 15 ounce can of black beans, rinsed
  • 1 avocado, peeled, pitted, and chopped
  • ¼ cup Manchego cheese, shredded

TIP: use scissors to cut the green leaf lettuce. It’s a 1000 times easier.

Serves: 4

Ingredients

  • 8 ounces cooked brown rice (I used Trader Joe’s Frozen Organic Brown Rice)
  • 1 head green leaf lettuce, chopped
  • ¼ cup cilantro, chopped
  • 1 15 ounce can of black beans, rinsed
  • 1 avocado, peeled, pitted, and chopped
  • ¼ cup Manchego cheese, shredded

Directions

Place all your ingredients in separate bowls.

Mix some of the cilantro into the cooked brown rice.

Layer your salad bowls starting with the brown rice

Then he lettuce, and the beans.

Sprinkle the remaining cilantro on top.

Top with the avocado.

Squeeze lime juice on top

end with a sprinkling of cheese

This makes a great vegetarian dish. If you want you can add 1/4 less of the black beans and use 2 ounces of chicken breast instead.

If you don’t have a Trader Joe’s check your local grocer’s freezer for brown rice. It’s a bit more expensive, but it saves me so much time cooking rice. and we all know brown rice take so much longer to cook.

You know, I almost got a rice cooker, but I really, really, really do not need another appliance to either store somewhere or place on my counter.
