Ingredients

  • 3/4 c. all-purpose flour
  • 3/4 c. cake flour
  • 2/3 c. sugar
  • 1/2 c. cornmeal
  • 2 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 3 x Large eggs
  • 2/3 c. lowfat milk
  • 1/3 c. buttermilk
  • 1/4 c. corn oil
  • 2 Tbsp. lowfat sour cream
  • 3 Tbsp. butter melted
  • 1/2 c. finely-diced red bell pepper
  • 1 x jalapeno - (to 2) seeded, and finely diced

Directions

  1. Heat the oven to 325 degrees. Butter or possibly spray a 13- by 9-inch pan. Place the all-purpose flour, cake flour, sugar, cornmeal, baking pwdr and salt in a large bowl and stir to combine.
  2. In another large bowl, combine the Large eggs, lowfat milk, buttermilk, oil, lowfat sour cream, butter, bell pepper and jalapeno and stir to combine. Add in the wet ingredients to the dry and mix thoroughly.
  3. Pour the batter into the pan and bake till hard in the center and golden brown on top, 30 to 35 min. Let cold 15 to 20 min before serving.
  4. This recipe yields 10 to 12 servings.
