Broccoli Stuffed Tomatoes

Ingredients

  • 8 med Tomatoes
  • 10 ounce Pkg. frzn minced broccoli
  • 1 c. Shredded cheddar cheese
  • 1 sm Onion, chopped
  • 2 Tbsp. Light mayonnaise
  • 1 47/250 tsp Salt

Broccoli Stuffed Tomatoes

Servings: 8
 

Directions

  1. Cut each tomato into 5 wedges, leaving connected at base. In a covered saucepan, over medium heat, steam broccoli in 1/2 c. water for 2 min. Drain and combine with remaining ingredients.
  2. Spoon equal amounts into each tomato. Press tomato wedges back toward center. Bake in 325F degree oven on a rack in a shallow pan for 25 min.
