Broccoli, Cheese & Rice Casserole Recipe

Ingredients

  • 1 stick butter
  • 1/2 c. minced onions
  • 4 boxes minced broccoli, thawed
  • 2 cans cream of mushroom soup
  • 2 cans lowfat milk (measured in soup cans)
  • 7 ounce. box Minute Rice, uncooked
  • 16 ounce. Velveeta cheese, cut into cubes

Directions

  1. In large pot, heat butter. Saute/fry onions in butter. Add in broccoli and saute/fry till mix is warm. Add in soup, lowfat milk, rice and cheese. Stir till cheese is melted into mix. Bake in 13 x 9 inch pan at 350 degrees for 1 hour or possibly till lightly brown on top.
