Broccoli And Corn Casserole

Ingredients

  • 2 Tbsp. Minced onion
  • 2 Tbsp. Margarine
  • 1 Tbsp. Flour
  • 1 1/4 c. Lowfat milk
  • 1 pkt (8-ounce) Monterey Jack cheese, shredded
  • 1 can (12-ounce) whole kernel corn, liquid removed
  • 1/2 c. Cracker crumbs
  • 2 pkt (10-ounce) frzn broccoli spears, cooked & liquid removed

Directions

  1. Saute/fry onion in 1 Tbs margarine. Blend in flour. Gradually add in lowfat milk & cook, stirring constantly till thickened. Add in cheese, stirring till melted.
  2. Stir in corn & 1/4 c. crumbs. Arrange broccoli in a 11-3/4x7-1/2 inch baking dish. Pour cheese sauce over broccoli. Toss remaining crumbs & margarine then sprinkle over casserole. Bake uncovered at 350 for 30 min.
  3. Makes 8 servings.
  4. NOTE: To make ahead of time, cover & chill overnight. Bake uncovered for 45 min at 350.
