Ingredients
- 2 Tbsp. Minced onion
- 2 Tbsp. Margarine
- 1 Tbsp. Flour
- 1 1/4 c. Lowfat milk
- 1 pkt (8-ounce) Monterey Jack cheese, shredded
- 1 can (12-ounce) whole kernel corn, liquid removed
- 1/2 c. Cracker crumbs
- 2 pkt (10-ounce) frzn broccoli spears, cooked & liquid removed

Broccoli And Corn Casserole
Servings: 8
Directions
- Saute/fry onion in 1 Tbs margarine. Blend in flour. Gradually add in lowfat milk & cook, stirring constantly till thickened. Add in cheese, stirring till melted.
- Stir in corn & 1/4 c. crumbs. Arrange broccoli in a 11-3/4x7-1/2 inch baking dish. Pour cheese sauce over broccoli. Toss remaining crumbs & margarine then sprinkle over casserole. Bake uncovered at 350 for 30 min.
- Makes 8 servings.
- NOTE: To make ahead of time, cover & chill overnight. Bake uncovered for 45 min at 350.
