Broccauli Egg Salad

I find it a little boring to serve or consume fresh broccoli and cauliflower just by dipping them in some creamy sauce. I think we can all do better than that especially when bringing these veggies to a potluck or cocktail party. Next time you do so, make it an appetizing salad by following this very simple recipe. Your party host and guest will certainly be very impressed!

Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 hard-boiled eggs, diced
  • 3 slices of bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup, low-fat mayonnaise
  • 1/2 cup sugar
  • 1 tbsp white vinegar
  • 1 tbsp Michiu rice cooking wine

Directions

  1. Prepare the dressing by mixing and whisking together the mayonnaise, sugar, vinegar and cooking wine. Set aside.
  2. In a large bowl, combine broccoli, cauliflower, eggs and cheese.
  3. To serve, place desire amount of the salad mixture on a salad plate and pour dressing over it. Sprinkle crumbled bacon over the salad.
