Ingredients

  • 1 x pita bread, cut in half cooking spray
  • 2 x Large eggs
  • 1/2 c. diced cooked potatoes Salt and grnd black pepper to taste

Directions

  1. Preheat oven to 350 degrees. Place pita bread in oven to hot.
  2. Coat a medium skillet with cooking spray and place over high heat. Add in potatoes; saute/fry till lightly browned, about 5 min. Reduce heat to medium and add in Large eggs. Mix gently till Large eggs are hard, about 45 seconds.
  3. Season with salt and black pepper. Remove pita from oven. Stuff pita with potato and egg mix.
