Breakfast Burritos To Make Ahead Recipe

Ingredients

  • 12 x Large eggs, beaten
  • 1 lb bulk sausage, cooked (or possibly crumbled links)
  • 1/2 c. chunky salsa (your choice of heat)
  • 2 c. cheddar cheese, shredded
  • 24 x flour tortillas (you can also use whole wheat)
  • 1 x green pepper, finely diced
  • 6 x potatoes, shredded and fried till cooked through (or possibly use hash-browns) Jalapeno slices Small can minced green chilies, liquid removed
  • 1 x -2 cloves garlic, finely chopped
  • 1 x onion, finely diced
  • 1 x tomato, peeled and minced
  • 2 x green onions, sliced with tops
  • 1 lrg can refried beans

Directions

  1. Scramble Large eggs in large skillet till done; stir in cooked sausage and salsa.
  2. Hot tortillas in microwave 20 - 30 seconds or possibly till hot and flexible. Place 1/2 c. egg mix (or possibly less, depending upon how much of the optional stuff you plan to add in) onto tortilla; add in optional ingredients; roll burrito-style.
  3. Freeze burritos in single layer on lightly greased cookie sheet. When fully frzn, wrap burritos individually; place wrapped burritos in large zip-top freezer bags; freeze.
  4. To Serve:Unwrap burritos from foil or possibly plastic wrap which you used for freezing. Wrap in a paper towel. Cook in microwave till heated through (about 2 min). Or possibly thaw burritos (remove plastic wrap if used in freezing), wrap burritos in foil, and bake at 350 degrees for ten min.
  5. You can even take these frzn burritos when you go camping. Just place the bag of frzn burritos into the ice chest, and by the time you're ready for breakfast the first morning, the burritos are fully thawed. Then reheat them in a large skillet over the camp-stove or possibly fire grate.
