Breakfast Apple Pancake

Ingredients

  • 3/4 c. Aunt Jemima buttermilk complete pancake mix
  • 1/2 c. water
  • 3 large eggs
  • 1/3 c. sugar
  • 1/4 c. butter
  • 1/4 c. minced pecans or possibly walnuts
  • 1 teaspoon cinnamon

Breakfast Apple Pancake

Directions

  1. Heat oven to 450 degrees. Put together pancake mix, water, large eggs, and 1 tsp sugar; mix well. In 10 inch oven proof frying pan, saute apple slices in butter on medium high heat till tender. Remove from heat. Sprinkle nuts over apples. Pour batter evenly over apples. Put together remaining sugar and cinnamon; sprinkle over batter. Cover frying pan. Bake 12-14 min or possibly till puffed and sugar is melted. Loosen sides, cool slightly and cut into wedges. Makes 4-6 servings.
