%20lead%20to%20an%20uninspired%20kitchen-sink%20mess%20of%20a%20sandwich%20(barnacles,%20liver,%20&%20turmeric,%20anyone?)%20it%20would%20result%20in%20a%20dish%20completely%20lacking%20in%20context.%3C/p%3E%3Cp%3EAnd%20so%20the%20trick%20with%20this%20challenge%20was%20to%20come%20up%20with%20a%20sandwich%20that%20both%20makes%20culinary%20sense%20in%20its%20own%20right,%20but%20also%20happens%20to%20contain%20the%20correct%20ingredients%20which%20allow%20it%20to%20be%20dubbed%20a%20%22BLT.%22%3C/p%3E%3Cp%3EI%20found%20my%20solution%20to%20this%20conundrum%20in%20my%20recent%20trip%20to%20Madrid,%20where%20I%20devoured%20my%20weight%20in%20pinchos,%20essentially%20open-faced%20tapas-style%20sandwiches,%20and%20tapas%20of%20all%20stripes.%3C/p%3E%3Cp%3ESpicy%20bravas%20sauce%20is%20most%20commonly%20found%20in%20a%20potato%20dish%20alongside%20garlicky%20mayo%20(and,%20potato%20freak%20that%20I%20am,%20%20I%20enjoyed%20this%20dish%20many,%20many%20times%20in%20a%20number%20of%20different%20iterations)%20but%20it%20also%20makes%20an%20appearance%20on%20that%20classic%20Spanish%20tapa,%20the%20tortilla.%20The%20Madrileno%20version%20typically%20contains%20potatoes%20and%20onions,%20but%20I%20needed%20an%20%22L,%22%20so%20mine%20has%20leeks.%20To%20keep%20things%20light,%20I%20omitted%20the%20potatoes.%3C/p%3E%3Cp%3EPretty%20little%20pinchos,%20all%20in%20a%20row!%3C/p%3E%3Cp%3EI%20wanted%20to%20recreate%20the%20flavor%20of%20a%20particular%20bravas%20sauce%20that%20I%20had,%20so%20rather%20than%20make%20it%20tomato-based,%20I%20did%20a%20Catalonian%20version%20based%20on%20red%20peppers.%20I%20make%20no%20claims%20to%20authenticity,%20but%20this%20did%20taste%20very%20much%20like%20what%20I%20had%20in%20Madrid.%3C/p%3E%3Cp%3EThis%20is%20definitely%20a%20taste-as-you-go%20kind%20of%20deal,%20but%20here's%20the%20general%20idea:%20Combine%203%20roasted%20red%20peppers,%202%20cloves%20of%20garlic,%20a%20splash%20of%20sherry%20vinegar,%201/4%20teaspoon%20smoked%20hot%20Spanish%20paprika,%20a%20pinch%20of%20Cayenne,%20salt,%20and%20a%20glug%20of%20olive%20oil.%20Puree,%20adding%20enough%20olive%20oil%20to%20create%20a%20pourable%20consistency,%20and%20add%20salt%20to%20taste.%3C/p%3E%3Cp%3EFor%20the%20tortilla:%20In%20an%20%208%20inch%20non%20stick%20skillet,%20saute%203%20chopped%20leek%20in%20olive%20oil,%20along%20with%20a%20pinch%20of%20salt,%20%20until%20soft.%20Remove%20and%20wipe%20the%20pan.%20Gently%20fold%20the%20leeks%20and%20some%20chopped%20chives%20into%205%20whipped%20eggs.%20Get%20the%20pan%20good%20and%20hot,%20and%20pour%20in%20the%20eggs.%20Reduce%20heat%20to%20medium-high%20and%20cook%20for%205%20minutes.%20Now%20-%20don't%20be%20scared!%20-%20flip%20the%20tortilla%20onto%20a%20plate%20(it%20will%20still%20be%20a%20bit%20wiggly%20and%20runny)%20with,%20as%20Julia%20Child%20would%20say,%20the%20courage%20of%20your%20convictions.%20Slide%20it%20back%20into%20the%20pan%20and%20cook%20for%20an%20additional%20few%20minutes.%20Done!%3C/p%3E%3Cp%3EBut%20this%20is%20a%20BLT%20sandwich%20challenge%20after%20all,%20so%20I%20suggest%20you%20do%20this:%3C/p%3E%3Cp%3EAnd%20make%20sure%20to%20wash%20them%20down%20with%20-%20what%20else?%20-%20a%20lovely%20Spanish%20wine.%3C/p%3E%3Cp%3ETo%20check%20out%20a%20whole%20world%20of%20BLT%20creations,%20make%20sure%20to%20visit%20Lazaro%20Cooks%20when%20he%20posts%20the%20round%20up%20on%20April%2029!%3C/p%3E){kind=link}
