  • 1 1/2 CUPS GLUTEN FREE FLOUR
  • 3/4 CUP FAXSEED MEAL
  • 3/4 CUP OAT BRAN
  • 1 CUP BROWN SUGAR
  • 2 TEASPOONS BAKING SODA
  • 1 TEASPOON BAKING POWDER
  • 1 TEASPOON ZANTHAN GUM
  • 1/2 TEASPOON SALT
  • 2 TEASPOONS GROUND CINNAMON
  • 1 1/2 CUPS CARROTS (2) SHREDDED
  • 2 APPLES,PEELED AND SHREDDED
  • 1 CUP NUTS,USED WALNUTS
  • 3/4 CUP MILK
  • 2 EGGS, BEATEN
  • 1 TEASPOON VANILLA EXTRACT

Time: 30 minutes prep, 25 minutes cook

Directions

  1. MIX TOGETHER FLOUR, FLAXSEED MEAL, OAT BRAN, BROWN SUGAR, BAKING SODA, BAKING POWDER, ZANTHAN GUM, SALT AND CINNAMON IN A LARGE BOWL.
  2. STIR IN CARROTS, APPLES AND NUTS.
  3. COMBINE MILK, BEATEN EGGS AND VANILLA.
  4. POUR LIQUID INGREDIENTS INTO DRY INGREDIENTS.
  5. STIR UNTIL INGREDIENTS ARE MOISTENED.
  6. DO NOT OVER MIX.
  7. FILL MUFFIN CUPS WITH PAPER INSERTS TO 3/4 FULL.\
  8. BAKE AT 350 DEGREES F. FOR 25 MINUTES
