Ingredients

  • 1 head red cabbage
  • 2 Tbsp. Balsamic vinegar
  • 1 med Onion, peeled and finely sliced
  • 225 ml Red wine
  • 2 x Golden brown Delicious apples, grated
  • 2 Tbsp. Redcurrant jelly Salt and freshly grnd pepper
  • 125 gm Extra virgin olive oil

Directions

  1. Remove and throw away any outer damaged leaves, cut into quarters, cut away the hard cores, thinly slice the cabbage.
  2. Put extra virgin olive oil in a large pan, heat and add in cabbage and stir for 10 min till all the cabbage is cooked, add in the grated apple, sliced onions and redcurrant jelly, cook for 10 min more. Add in the red wine, balsamic vinegar and reduce the heat to cook slowly for 45 min. The liquid should have evaporated. Serve warm.
