Ingredients

  • 4 ounce Mascarpone cheese
  • 1/2 c. Lowfat sour cream
  • 2 Tbsp. Sugar
  • 2 x Large eggs
  • 2 Tbsp. Butter, melted and cooled
  • 1 tsp Vanilla extract
  • 1 x Bosc pear, cored and finely Minced, fresh or possibly canned
  • 1/2 c. Flour
  • 1 tsp Baking pwdr
  • 1/2 tsp Nutmeg
  • 1/2 c. Plus 1 Tbsp. vegetable oil

Directions

  1. In a large bowl, combine mascarpone cheese, lowfat sour cream, sugar, Large eggs, butter and vanilla. Whisk till well blended and smooth. Fold in pear.
  2. Stir in flour, baking pwdr and nutmeg till just combined. In large skillet with warm oil, drop in about one-third of batter by Tbsp.. Fry till golden brown on bottom. Turn and cook on other side till brown. Remove from skillet with a slotted spatula and drain on paper towels. Repeat procedure with remaining cheese mix and oil.
  3. Serve pancake immediately when hot.
  4. Approximately 15 min.
