Bonda (Fried Savoury Potato Balls)

Aromatic and spicy potato filling; dipped/coated with gram flour mixture and fried in oil.

Ingredients

  • Potato filling
  • 2 medium size potatoes (boiled and mashed)
  • 1/2 cup frozen green peas
  • 2 green chilli (sliced thinly)
  • 1 red chilli (sliced thinly)
  • 3 shallots (sliced/chopped)
  • 1 tsp mustard seeds
  • 1 tsp kunyit/turmeric powder
  • 2 sprigs curry leaves
  • 2 tbsp oil
  • Salt for taste
  • Batter/flour mixture
  • 3 tbsp gram flour
  • 1 tbsp oil
  • Water - as needed
  • Salt for taste
  • Oil for frying

Directions

  1. Potato Filling
  2. In heated oil, fry chillies, shallots, mustard seeds.
  3. Add mashed potatoes, turmeric powder, curry leaves, peas and salt to taste.
  4. Stir till all sticks together.
  5. Remove from heat and let it cool down.
  6. Roll filling; bit by bit into individual balls.
  7. For batter/flour coating
  8. Add flour, salt and oil.
  9. Mix while pouring enough water for a thin batter.
  10. Dip balls in batter.
  11. Fry/deep fry til golden brown.
  12. Remove and drain over kitchen towel.
