Blueberry Pudding Cake

Ingredients

  • 2 c. blueberries
  • 1 c. flour
  • 1 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 3 tbsp. melted shortening
  • 3/4 c. sugar
  • 1/2 c. lowfat milk
  • 1 c. sugar
  • 1 tbsp. cornstarch
  • 1 c. boiling water

Blueberry Pudding Cake

Directions

  1. Put the blueberries in the bottom of an 8-inch square baking pan. Mix the flour, baking pwdr, salt, shortening, 3/4 c. sugar and lowfat milk together and sprinkle over the berries.
  2. Mix the 1 c. sugar and cornstarch together and sprinkle over batter in pan. Pour boiling water over this. Bake at 350 degrees for 45 min.
