Blueberry Fool

Ingredients

  • 300g fresh or frozen blueberries
  • 1 lemon
  • 200ml plain yogurt
  • 150ml double cream
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla essence

Blueberry Fool

Time: 15 minutes prep
Servings: 4 Servings
 

Directions

  1. RINSE - Place the blueberries in a colander and rinse under running water. Reserve a few for decoration.
  2. SOFTEN - Put the berries in a pan and add the sugar and lemon juice. Heat gently for about 8-10 minutes until the fruit is soft.
  3. CRUSH - Crush the berries with a fork to make a compote. Leave to cool.
  4. WHIP - Meanwhile, whip the cream to soft peaks. Fold it into the yogurt. Stir in two thirds of the blueberry compote then lightly fold in the remaining compote.
  5. CHILL - Divide the mixture into 4 individual glasses and top with the reserved blueberries. Chill until ready to serve.
