A sweet, custardy, fruit-filled breakfast treat baked in a pie pan. Any berry or stone fruit works well in this recipe.

  • 3/4 cup + 2 Tbsp. all purpose flour
  • 1/2 cup sugar, slightly heaping
  • pinch of salt
  • 3 eggs
  • 6 Tbsp. butter, melted
  • 8 oz milk
  • 2 cups blueberries (any fruit works well in this recipe, cherries are the classic fruit used)

Directions

  1. Preheat oven to 400 degrees F
  2. Generously butter an 11 inch tart pan (or pie pan)
  3. In a large bowl, combine flour, sugar and salt
  4. Incorporate the eggs, one at a time, beating well after each addition.
  5. When the batter is smooth, mix in the melted butter.
  6. Then, working slowly, gradually add the milk, mixing well, so no lumps form.
  7. Scatter the blueberries into the prepared pan and gently pour batter over the fruit.
  8. Bake for about 25 minutes or until golden brown, but firm on top. It may still be slightly wobbly in the center, but a tester inserted in the middle should come out clean.
