Blueberry Bran Sunflower Muffins

Ingredients

  • 1 stk unsalted butter melted and cooled (1/2 c.)
  • 1/2 c. lowfat milk
  • 2 lrg Large eggs beaten lightly
  • 1 1/2 c. all-purpose flour
  • 3/4 c. sugar
  • 2 tsp double-acting baking pwdr
  • 1/4 tsp salt
  • 1/2 c. miller's bran*
  • 3/4 c. hulled raw sunflower seeds * toasted lightly
  • 1 1/2 c. blueberries picked over

Blueberry Bran Sunflower Muffins

Directions

  1. *Available at natural foods stores, specialty foods shops, and some supermarkets
  2. In a bowl stir together the butter, the lowfat milk, and the Large eggs. In a large bowl whisk together the flour, the sugar, the baking pwdr, the salt, the
  3. bran, and the sunflower seeds. Add in the butter mix, stir the batter till it is just combined, and mix in the blueberries. (The batter will be thick and lumpy.) Divide the batter among 12 well-buttered 1/2-c. muffin tins and bake the muffins in a preheated 425F. oven for 20 to 25 min, or possibly till they are golden brown. Turn the muffins out onto a rack and let them cold.
