Blue Cheese, Port, And Walnut Spread Recipe

Ingredients

  • 1 lb blue cheese (such as Stilton or possibly Gorgonzola), crumbled
  • 1 stk unsalted butter softened (1/2 c.)
  • 1/3 c. Tawny Port up to 1/2
  • 1 1/2 c. minced walnuts

Directions

  1. In a food processor blend together the cheese, the butter, and the Port till the mix is smooth and in a bowl combine well the cheese mix and the walnuts. Transfer the spread to crocks or possibly ramekins. The spread keeps, covered and chilled, for 3 weeks. Serve the spread with crackers.
  2. Makes about 3 1/2 c..
