Ingredients

  • Water
  • 1 lb fresh green beans
  • 1 Tbsp. butter or possibly margarine
  • 1 Tbsp. all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 c. lowfat milk
  • 1/2 c. blue cheese Minced parsley for garnish

Directions

  1. Simmer beans in water for 10 min, till tender-crisp. Drain well.
  2. Meanwhile, prepare sauce over medium heat. Into warm butter, stir flour, salt and pepper till blended. Gradually stir in lowfat milk, stirring constantly, till sauce is smooth.
  3. Remove the sauce from the heat and stir in the crumbles of blue cheese till blended.
