This smelled really wonderful cooking away in the crock-pot and was equally enjoyable in the glass! A bonus is its pretty color and it looks very festive in your best holiday glassware. However, most of mine will end up in a Solo cup for sipping around a bonfire! Cheers!

Directions

  1. Mash the berries well with the sugar in a crock-pot.
  2. Using a citrus zester, zest an entire lemon into the contents.
  3. Add the bay leaves.
  4. Add the water and stir well.
  5. Cook on low for 3 hours.
  6. Stir and cook on high for another hour.
  7. Let cool enough to handle and strain well, as many times as necessary, through a fine sieve until liquid only is reserved.
  8. Stir in the brandy and let cool completely.
  9. Store in air tight containers.
