  • 2 (15 ounce.) cans black eyed peas, rinsed & liquid removed
  • 2 green onions
  • 1 red bell pepper, seeded & finely minced
  • 1/2 green bell pepper, seed & finely minced
  • 1/4 c. minced fresh parsley
  • 1 clove garlic, peeled & finely chopped

Directions

  1. In large bowl combine peas, onions, red and green peppers, parsley and garlic. In small bowl whisk together the dressing ingredients. Pour over the mix, toss and serve immediately.
