Black Bean Soup with Bacon & Sherry Recipe

• 6 strips bacon
• 1 cup chopped onion (about 1 small onion)
• 2 garlic cloves, minced
• 2 stalks celery, chopped
• 2 tsp finely chopped red jalapeno, seeded & membranes removed, if desired
• 1/2 green bell pepper, chopped
• 1 tsp ground cumin
• 3 can (14.5 oz. each) black beans, drained and rinsed
• 3 cans (14.5 oz. each) low-sodium chicken or vegetable broth
• Sour cream
• Cilantro
• About 1/4 cup dry sherry (optional)
