Ingredients

  • 1 c. Black beans, cooked
  • 2 whl mangos, peel, seed, chop
  • 1/2 x Red bell pepper, diced
  • 1/2 x Green bell pepper, diced
  • 1/2 x Red onion, diced
  • 3/4 c. Pineapple juice
  • 1/2 c. Fresh lime juice
  • 1/2 c. Cilantro, minced
  • 2 Tbsp. Grnd cumin
  • 1 sm Jalapeno, or possibly chile of choice Salt and pepper, to taste

Directions

  1. Throw the whole mess together, let flavors combine for at least and hour.
  2. If mangos aren't too ripe, this can last for up to 4 days covered in the fridge.
