Big Game Meatloaf Supreme

Ingredients

  • 2 lb deer, antelope, elk or possibly moose burger
  • 2 c. soft bread crumbs
  • 1/2 c. venison stock or possibly beef broth
  • 1/2 c. minced onion
  • 2 x Large eggs slightly beaten
  • 1 tsp salt
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp sugar
  • 1/4 tsp celery salt
  • 1/4 tsp dry crushed sage leaves
  • 1/4 tsp dry oregano leaves
  • 1/4 tsp freshly-grnd black pepper
  • 2 sm tomatoes peeled, halved, and seeded

Servings: 6
 

Directions

  1. Heat oven to 350 degrees. Grease 9- by 5-inch loaf pan; set aside.
  2. In large mixing bowl, combine all ingredients except tomatoes; mix well.
  3. Pat half of meat mix into prepared pan. Arrange tomatoes on meat mix, leaving 1/2 inch around edges of pan. Spread remaining meat mix over tomatoes, pressing well around edges to seal.
  4. Bake till well browned, about 1 1/2 hrs. Let stand 10 min. Remove to serving platter.
  5. This recipe yields 6 to 8 servings.

    I used elk burger for this recipe. I was out of sage and didn't have the tomatoes. I am not a big fan of tomatoes so I didn't really miss them. Great tasting meatloaf. Looking forward to making it a second time with the sage included.
