  • 1 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1 tsp garlic pwdr
  • 1 tsp onion pwdr
  • 1 tsp chopped fresh thyme
  • 1/2 tsp chopped fresh oregano
  • 1 tsp chopped fresh basil
  • 2 tsp paprika Salt to taste Freshly-grnd black pepper to taste
  • 2 x Large eggs
  • 2 x egg whites
  • 1 tsp warm pepper sauce
  • 1 1/2 lb boneless skinless chicken breasts halved
  • 3 Tbsp. extra virgin olive oil

Directions

  1. Preheat the oven to 350 degrees.
  2. Combine the bread crumbs, Parmesan cheese, and spices in a plastic bag. In a shallow bowl, beat the Large eggs and egg whites. Add in the warm pepper sauce.
  3. Dip each chicken breast into beaten Large eggs. Roll in the bread crumb mix.
  4. Spread the chicken breasts out on a cookie sheet. Drizzle extra virgin olive oil on each chicken breast.
  5. Bake the chicken for 30 to 35 min till no traces of pink remain.
  6. This recipe yields 6 servings.
  7. Serving size: 3 to 4 ounces.
