Ingredients

  • Non-Stick cooking spray
  • 4 whole eggs
  • 4 egg whites
  • 1/4 cup water
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup chopped onions
  • 1/2 cup 2% mild shredded cheddar cheese
  • 1/2 cup thick & chunky salsa

Directions

  1. Beat together the whole eggs, egg whites and water with a whisk until well blended.
  2. Cook vegetables in a large nonstick skillet sprayed with cooking spray over medium-high heat 5 minutes or until crisp-tender. Remove from skillet; set aside.
  3. Add eggs to skillet; cover. Cook 6 minutes.
  4. Top one half of omelet with pepper mixture and cheese; fold in half. Cook, covered, 3 minutes or until cheese is melted. Serve topped with salsa. Cut into 4 pieces.
