  • 3 lbs. boneless beef eye of round roast (steak)
  • 8 ounce plain yogurt
  • 1/4 c. finely minced green onion
  • 1/2 teaspoon dry dill weed
  • 1/2 recipe (4) sandwich rounds
  • 1 recipe marinated vegetable toss

Directions

  1. See Sandwich Round recipe.See Marinated Vegetable Toss.
  2. Cut beef into slices. Sprinkle beef with liquid mix from marinated vegetable toss one side at time, rub together and let stand 30 min. Broil. Cover and refrigerate beef 3 hrs. Put together yogurt, onion and dill. Cover and refrigerate 3 hrs. Before serving, slice beef into bite size strips. Spread some yogurt mix on inside of round; place some beef and marinated vegetable toss in round. Now you have a wonderful beef salad sandwich rich in vitamins and nutrition.
