Beef Enchilada Casserole Recipe

Ingredients

• 12 Small Corn Tortillas
• 2 c. Shredded Cheddar Cheese
• 1.5 c. Cooked Beef (shredded or ground beef)
• 1 Medium Onion, minced
• Enchilada Sauce, homemade, canned or dry package reconstituted.
• Optional: 1/4 c. Peppers, diced (more or less to taste)
• Another sidenote: Here's an example of enchilada sauce mixes you can get at the store. You just have to add water! :)
