Beef And Noodle Soup (Ala Rhonda)

Ingredients

  • 1/2 lb grnd beef
  • 3 x cloves garlic, chopped
  • 3 x portobello mushrooms, minced into 1/2 inch pcs
  • 1/2 x red bell pepper, minced
  • 1/2 lrg yellow onion, minced
  • 2 x zucchini, minced into 1/2 inch chunks
  • 3 x plum tomatoes, minced
  • 4 x - 5 c. water
  • 1 c. red wine (or possibly to taste)
  • 1 c. chicken, pork or possibly beef gravy (optional) dry noodles (egg noodles, fettuccini, or possibly other flat noodles) salt and pepper to taste Parmesan cheese

Directions

  1. Brown beef, sprinkled with salt and pepper, over medium heat. Add in a few Tbsp. wine if the beef sticks to the pot, but allow the wine to evaporate. Add in garlic and mushrooms stirring till the mushrooms begin to soften. Add in peppers, onions, zucchini and tomatoes. Add in salt and pepper to taste. Stir to combine all ingredients. Cover and cook over medium heat till the vegetables give up their juices and begin to boil. Add in gravy and water.
  2. Bring to a boil. Add in dry noodles. (add in additional water, if needed) Allow noodles to boil till cooked. Taste for salt and pepper. Add in additional wine for flavor and cook another 5 min. Serve in a bowl with parmesan cheese.
  3. Alterations could include: broth for gravy or possibly water or possibly both, additions of other vegetables, and it occurred to me which adding something like a small amount of white beans would also be nice.
