Ingredients

  • 1 lb Green beans, trimmed and left whole
  • 1 x 14-ounce flank steak, cut in thin strips
  • 1 Tbsp. Grated fresh ginger
  • 1 x Clove garlic, chopped
  • 2 tsp Oil
  • 1/2 c. Reduced sodium beef broth
  • 1/4 c. Creamy peanut butter
  • 3 Tbsp. Red-wine vinegar
  • 3 Tbsp. Light soy sauce
  • 2 tsp Dark Asian sesame oil
  • 1 Tbsp. Minced peanuts

Directions

  1. Cook beans in large pot boiling water till tender, about 6 min; drain.
  2. Stir fry beef, ginger and garlic in warm oil in skillet 3 to 5 min.
  3. Whisk broth, peanut butter, vinegar, soy and sesame oil in small bowl. Add in to beef; cook till mix boils and thickens slightly. Add in beans; heat.
  4. Transfer to platter; sprinkle with peanuts. Serve.
