  • 2 1/2 lb lean beef stew meat cut in 1" cubes
  • 1 lrg onion minced
  • 2 x garlic cloves chopped
  • 3 x carrots cut in 1" slices
  • 2 x celery ribs cut in 1/2" slices
  • 2 med potatoes cut in 1" cubes
  • 16 ounce beer
  • 2 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 tsp oregano
  • 2 Tbsp. tomato paste
  • 3 Tbsp. melted butter
  • 1/3 c. flour

Directions

  1. Place all ingredients, except butter and flour in the crock pot; mix well. Cover and cook on LOW for 8 to 10 hrs.
  2. Mix melted butter with flour; add in to the stew. Taste and adjust seasonings. Turn to HIGH and cook till thickened, about 15 to 20 min.
  3. This recipe yields 6 servings.
